Mariano Coffee LLC; Rancho San Francisco, Chiapas
I recently discovered a remarkable coffee at my local farmers market in Berthoud. I frequently visit the farmers’ market as an excellent opportunity to explore new and exceptional coffee roasters.
Mariano Coffee LLC is one such roaster. Despite its relatively recent establishment, they have yet to establish a social media presence. This oversight is unfortunate, as their coffee is exceptionally well-crafted.
Mariano Coffee LLC has successfully captured the intricate flavors of the Mexican Chiapas coffee bean originating from Rancho San Francisco. Upon opening the bag, I was greeted by an enticing aroma of Almond and Vanilla. During brewing, I also detected a subtle hint of Peaches, which will become more pronounced in the taste.
I brewed this coffee using a French Press, which I believe optimizes flavor extraction. The Almond was immediately discernible, with a Vanilla finish note. However, when I added milk, the flavors underwent a transformative change. The Peach and Vanilla became the predominant tastes, while the Almond remained as the finish note.
The body of this coffee is ideal for a warm summer day. It is light, lively, and juicy, devoid of heaviness and stickiness. Adding milk enhances its mouthfeel, providing a more well-rounded experience.
The acidity in this coffee is high, but it is not a cause for concern. It is crisp and refreshing, with a tart and tangy finish. When milk is incorporated, it becomes more subtle and creamy.
Overall, I highly recommend Mariano Coffee LLC as the newest coffee roaster in Northern Colorado. They have made a promising start in the industry.
